Parota- little oil with lots of layers

 

 
This is a recipie I got from my friend which you wont regret giving it a try.Ever since I got this recipie from her, I have never turned back to those store bought ,frozen parotas.My daughter absolutely  loves it.
It is such a simple recipie that always turns out to a delicacy on the plate.


Ingredients:
  • Maida / All purpose flour - 2 cups
  • Milk - 1/2 cup
  • Sugar - 11/2 tsp
  • Salt - as required
  • Oil
Step 1:
Add milk,sugar and salt to the flour and knead.Add water if required and knead well.Once done add 2 tablespoon oil and knead little.Cover it and let it rest for 5 minutes.
Then form into balls using your fist as shown below .Let it rest for 1 hour.

Step 2:
Then on a clean smooth  surface,sprinkle little flour and place a dough ball.Flatten it little add some oil on top
and stretch it as thin as possible with a thin rolling pin.
Flatten as thin as possible.
Step 3:
Generously spread oil on top of the thinly flattened dough and fold it like we keep kosuvam for saree
and roll it loosly as shown below.And then let it rest for 2 hours.

Step 4:
Using  a rolling pin,gently flatten it and put it on the dosa pan and cook it like we do chappathis.
Remember to keep the flame in medium.
Sprinkle little oil on top,once cooked flip the other side and sprinkle little oil on top.


 



Step 5 :
Enjoy it with hot chicken kuruma!!!!!
 


Tofu Peas Masala

 

Ingredients:
Tofu - 1 pack
Peas - 1 cup
Carrots - 1/4 cup (cut into chunks)
Potaoes - 1/4 cup  (cut into chunks)
Pav Bhaji masala - 1 1/2 Tbsp
Chillie powder -1 Tbsp
Corriander Powder - 1 tsp
Turmeric Powder - 1tsp
Curry Leaves - 1 sprig
Salt - as required

Saute it in oil and grind the below:
Onion - 1 (small size)
Tomatoes - 2

Note:
I cut the tofus into pieces and shallow fried it in oil for better taste.

Steps:
1. Heat 2 Tbsp oil in a kadai.
2. Add  curry leaves.
3.Add the grinded Onion+Tomatoe paste
4.Saute it well until oil seperates.
5.Then add all the vegetables,add little water and close it with a lid for the vegetables to cook.(keep the flame in medium)
6.Once half cooked, add Pav Bhaji masala ,Chillie powder,Corriander Powder,Turmeric Powder
and salt.
7.When the vegetables are cooked,finally add the tofu.
8.Turn off the flame after a minute.
Tadaa.... yummy tofu masala goes well with chapatthis.
Mix with cooked rice for a tofu masala rice,its yummy as well.

Strawberry Short cake- for my daughters birthday

 
Here is the Strwaberry short cake that I made for my daughters birthday.The small one on the right side with balloons in it is for my son.Its a vanilla cake with strawberry icing.

Birthday cake for my hubby

Nope...he is not one...;) ,I just had only one candle at that time,so just sticked it in the cake.
The cake base is a tuty fruity Christmas cake that we make for Christmas(have already posted the
recipie before)
The icing on the cake  is chocolate ganache.

Thomas the train cake - for my sons birthday


With two kids ,finding time is really hard.But well, now that I have some time,here is a
picture of the cake that I made for my sons birthday. I was extremely happy with the
end result and my son loved it,what more do I need?
I haven't tried my hands in fondant yet,but one day I will.
This is a vanilla cake with buttercream frosting.
